Glazed chicken with rice and salad !

Here it comes, my first ever non vegetarian dish!!! Invented by taking inspiration from glazed chicken recipes but the glaze and the serving combination are the things I like.

Lets start with the chicken : 

The chicken was put aside with a coating of ginger garlic paste and chilli sauce for 5 minutes before frying.

It is fried on a pan with olive oil. Make sure to heat the pan well enough before frying them.

 

The glaze :

I invented this according to the taste I’d like –

So in a heated pan, fry some onions in olive oil, add orange juice and sugar

A bit of water can be added if the mix is becoming too thick

Add  tomato and chilli sauce, red chilli powder and some salt

A bit of lemon juice will also do the trick but keep it to a minimum

Once the orange juice is thick, we’re good to go

The salad :

 

This is the fun part of the dish, apart from the chicken :p Its a fresh and tangy salad stir fried in a pan with olive oil so that it doesn’t taste too raw and the ingredients blend in together :

Cabbage

Mint leaves

Green mango

Cherry tomatoes

Lemon

Final plating :

Fried garlic mushrooms!

Shrooms are great 😉 They don’t need much preparation and still taste great. Im going to be honest, even raw mushroom tastes as good as cooked ones.

For this dish I followed the simple principle of frying the mushrooms up with onions, green chilli, ginger garlic paste, lots of chopped garlic and red chilli powder. dish done!

Roll with egg and baked potato sauteed in olive oil and spring onions with seasoning to taste. 🙂 
 

Stir fry sprouts with cheese and toast

Easy weasy something you can make for light dinner or lunch or breakfast :p

Ingredients – 

Sprouts

Onions

Cabbage

Green chillies

Raw mango (if you have it)

Mint leaves

Olive oil

Cheese

Salt

Fry them up in olive oil and add salt to taste. Use some stir fry sauce if you have it….and we’re done! Serve with toast 🙂

Rolls / Quesadilla …call it what you will.

To make the tortilla :

refined flour

water

salt

Mix all the ingredients and create a dough. Roll into circulars with a rolling pin. (this may need some practice). Use a heated dry pan to roast them to perfection.

For the filling :

A lot of chopped veggies ( cabbage, tomato, onions, green chillies, and raw mango )!

chopped coriander leaves ( also called cilantro )

cheese cubes

olive oil

salt

le ingredients

Fry ’em up together in the following order and add salt :

onions -> green chilies -> cabbage -> tomato -> green mango -> coriander -> cheese

Roll them and serve with coleslaw 🙂

Stir fried pasta with mint

Not many would suggest but I do sometimes fry my pasta up. This recipe uses the same technique and works well for left over pasta 😉

Ingredients : 

boiled and cooled pasta

mint leaves

olive oil

chilli flakes

salt

onions and garlic chopped

In a pan heat olive oil and lightly fry onions and garlic. Add pasta, salt and chopped mint leaves. Serve with chili flakes and lemon juice if you’d like it more fresh!

Good ol’ rice

Here’s one recipe that might not be very ‘lazy cook’ friendly but is worth the effort. Simple rice dish one should always try.

Ingredients :

rice

potato

chopped onions, garlic

cherry tomatoes

chopped capsicum

coriander powder

tomato ketchup

chilli sauce

salt

oil (refined or olive)

Heat oil in pressure cooker. Fry chopped onions and garlic. When brown, add capsicum and potatoes.Now add the flavoring agents – salt, chilli sauce, coriander powder, tomato ketchup.Add rice and fry for a minute. Add cherry tomatoes.Add double the amount of water as the rice and seal the pressure cooker with lid. Let it whistle once before you switch it off and wait till all the steam has escaped. Ta da!

Egg sandwich

How fast you can make this dish depends on the speed at which you can crack open an egg plus the speed at which you can break cheese into small pieces. If you’re good with that, you get something filling to eat in less than 2 minutes. 

Ingredients : 

eggs

cheese 

ginger garlic paste

mayonnaise 

salt 

white bread

tomato ketchup (if you’re a fan like me) 

 

On the same heated pan toast bread on one side and fry the egg (obviously to save time). The egg has been mixed with ginger garlic paste and a bit of salt already. Put small pieces of cheese over the eggs and let them melt. Take these off from the pan. Coat one layer of bread with mayonnaise and put the eggs on the other. Top with ketchup. 

 

 

 

Refreshing pasta

Very light and fresh pasta dish.  One of the easiest things you can make.

Ingredients : 

Spaghetti

Garlic

Cherry tomatoes

Capsicum

Lemon

Salt

Olive Oil

Boil Pasta with olive oil, garlic and salt.

Saute cherry tomatoes and capsicum in olive oil with a pinch of salt.

Pour lemon juice on vegetales and more olive oil on pasta when plated. Finito.
